"ST-Link Server not installed" message after being configured

The first time I load Eclipse and try to add a debug configuration, the “Shareable ST-Link” is normal and when I click the check box, it drops down my device as selected. I apply and close the dialog but when I return to the configuration or try to use the debugger, all fields on the Debugger tab are cleared and I now see the “Server not installed” message in red.

I’ve updated / used the most recent stlink from st.com / tried runnin as root and myself. It looks as if the plugins are getting confused once I’ve connected to stlink.

If I remove the debug config, exit, restart eclipse and then add a new debug config it repeats the cycle.
